Best Banana Bread Skills

Linda’s Banana Bread recipe secrets:-
First bear 2 eggs lightly with a fork (not blender)
Add and mix lightly:
- 1/2 cup milk
- 1/2 cup melted coconut oil
- 1+1/2 cup sugar
- 1/2 tsp salt
- 1 cup Vanilla Essence
- 2 cup roughly mashed ripe bananas
- Add and mix lightly
- 1 rounded tsp Bicarb.
Let stand for 3 + min.
Add 1+1/2 cup flour mixed with 1 teaspoon baking powder
Fold in gently- never beat – don’t over mix
Can add options like:
- Cinnamon
- Walnuts chopped
Bake in oiled, lined bread pan for 30 to 40 min @ 180deg
Let stand in pan till cool.
But do you know that there are 2 SECRETS to making Banana Bread.
- Don’t over mix (only use a fork not a blender) and just roughly mash the banana with a fork (dont make it into baby food).
- Everything except the flour goes into a bowl with Bicarb for few minutes then only after this, you gently fold in the flour. (Never blend) (bit lumpy is good
